A Lifetime Honing a Wide Array of Tools

My degree is in Radio/TV/Film and I have worked as a busboy, movie theatre projectionist, pizza restaurant shift manager, materials handler on a copy machine assembly line, a mason’s helper and a welder’s assistant until becoming a culinary apprentice at Colonial Williamsburg. I have worked in busy taverns, large conference centers, small fine-dining restaurants, and a Mobil 5-star hotel. Moving to Fredericksburg in 2000, I was the executive chef of the Holiday Inn Select which became the Hospitality House in 2006. In the fall of 2008, coming in from the heat after 20 years in the hospitality industry, I took on a new challenge and am now in my seventh year of teaching Culinary Arts at Louisa County High School.

Louisa Culinary is a standards based course and is unlike many more traditional classes. The emphasis is on demonstrating competence in specific skills as well as assessment using the same performance evaluation standards pulled directly from the foodservice industry. One's grade is based on the same characteristics and behaviors that employers look for in their employees and much of our work will be shared with the community through social media.
